Description

It is produced according to various recipes and production is permitted not only in the province of Modena but also in the province of Reggio Emilia. The PGI production regulations leave ample room for manoeuvre, requiring the use of grape must in percentages between 20 and 90% and wine vinegar from 10 to 80%.

The ingredients, once mixed, must be kept for at least 60 days in wooden containers. The wording ‘aged’ is permitted for products that are at least 3 years old. Balsamic Vinegar of Modena obtained the Protected Geographical Indication (PGI) mark on 3 July 2009.
