The Olive Groves
Organic Extra Virgin Olive Oil
The olive groves of Tignale, overlooking the lake, with their native varieties, produce an oil with valuable characteristics.
The morphology of the territory, from the terraces with their typical dry stone walls and the distribution of the plants in small, narrow and steep plots, have preserved the olive groves from mechanization, but make the production of olives limited and expensive. If not valorised and protected the production was destined to become confused and to be lost.
In 1998 the Società Agricola Cooperativa Latteria Turnaria of Tignale therefore decided to maximize the quality of organic extra virgin olive oil by improving the cultivation, harvesting and milling techniques of the drupes.
The organic extra virgin olive oil from Latteria Turnaria di Tignale, rich in polyphenols, presents itself to the palate with hints of lively, bitter and spicy flavours, which are dissolved in the final sweet note. The scent of fresh olive and artichoke accentuates its freshness characteristics.
Production
How our oil is produced
Our oil is a superior category organic farming product. From the olive trees of the Casaliva, Leccino and Gargnà varieties, grown and cared for according to the most ancient tradition in one of the most enchanting areas of the Alto Garda Bresciano Park, the olives are obtained, and are then are harvested by hand and pressed within 24/48 hours. The oil extraction takes place through cold pressing in a modern continuous cycle plant. The organic extra virgin olive oil from the Latteria Turnaria, with excellent qualities, contains a very high number of polyphenols which counteract the aging of cells.
Cultivation
The cultivation of olive trees in Tignale has a long history; as early as 1467 in the Statutes of Tignale penalties were imposed for those who improperly cut down olive trees, demonstrating how important this activity was. In recent years the production of organic olive oil has been of about 150 -200 quintals per year, thanks to the reclamation of many previously abandoned areas.
Harvesting
The olives are harvested by stripping them from the branches by hand at a particular stage of ripening, because if they are bruised, damaged, or if they are too mature, the quality of the oil deteriorates.
The olives are consigned the same day, weighed and stored at the oil mill to be pressed within the following 24/48 hours.
Processing
In the modern continuous cycle mill of the Latteria Turnaria the olives are defoliated, washed after drying, sifted and sent to the crusher which tears the skins, pulp and crushes the stones to obtain the paste. It is subsequently malaxed at low temperatures and our prized oil is extracted using a 2-phase decanter and a vertical centrifugal separator.
